Cinco de Mayo is a holiday that celebrates the victory of the Mexican army over France in the France-Mexican war that occurred in 1962. It’s also widely celebrated in the U.S. and in other countries.
Everyone knows that the star of any Cinco de Mayo Fiesta is the food so it better be delicious!
Let us make your Cinco de Mayo Fiesta sizzle with a super easy, fun and delicious spread! Just don’t forget the chips, salsa, guacamole and ah ‘hem – the margs, of course!
Enchiladas with Buttermilk Brined Chicken
Ingredients:
- Piedmont Kitchen Co. Buttermilk Brined Pulled Chicken
- Salsa
- Enchilada Sauce (make life easier and buy a big can)
- Chopped onion
- Cilantro to garnish
- Tortillas (we prefer corn but flour works too)
- Shredded jack and cheddar cheese
- Sour cream
Directions:
- Preheat oven to 350 degrees.
- In a bowl, combine pulled chicken, salsa, cilantro and chopped onion.
- Mix the jack and cheddar cheese together in a second bowl.
- Steam corn tortillas in the microwave for 30-45 seconds to make them soft and easier to work with so they don’t break.
- Pour about a third of enchilada sauce in the bottom of a large baking dish.
- Lay out tortillas flat and place a small handful of the cheese mixture in each tortilla, leaving about 1 cup for topping.
- Evenly spread the shredded chicken among the tortillas. Then roll the tortillas up and place them in your baking dish. Evenly pour the remaining enchilada sauce on top of the enchiladas. Sprinkle top with remaining cheese.
- Cover enchiladas with foil and bake in the oven for 25 minutes. Remove foil and cook for another 10-15 minutes until top is golden and bubbly.
- Remove from oven and let cool. Sprinkle with chopped cilantro and a drizzle of sour cream. Enjoy!
Taco Bar with Piedmont Kitchen Co. Beef Barbacoa, Pulled Pork, and Buttermilk Brined Chicken
The one thing we love about a taco bar is that the options are endless and anyone can be satisfied! This is super easy.
Ingredients:
- Piedmont Kitchen Co. Beef Barbacoa
- Piedmont Kitchen Co. Pulled Pork
- Piedmont Kitchen Co. Buttermilk Brined Pulled Chicken
- Taco shells, tortillas and tostadas
- Chopped red onions
- Chopped tomatoes
- Chopped jalapenos
- Chopped avocado
- Chopped radishes
- Shredded lettuce
- Black olives
- Cotija cheese (or preferred cheese)
- Salsa
- Sour Cream
- Grilled peppers and onions
- Cilantro
- And any other toppings you like!
Directions:
- Heat up Piedmont Kitchen Co. Pulled Pork, Chicken and Beef Barbacoa in boiling water for 15 minutes.
- Put each product in different bowls and display on your taco bar table.
- Prep each topping and place in individual smaller dishes and arrange on your taco bar table too.
- Have everyone make their own tacos just the way they like them! Enjoy!
Vegan Refried Bean Tostadas
Offer a vegan option to your guests with this easy tostada recipe. You can also add egg for vegetarians or our Carolina-style Pulled Pork (or any of our other proteins) for flexitarians and meat eaters too.
Ingredients:
- Hard shell tostadas
- 1 can Refried beans
- Avocado
- Cilantro
- Chopped radishes
- Pickled jalapenos
- Pickled red onion
- Salsa
- Eggs (optional)
- Piedmont Kitchen Co. Pulled Pork (optional)
Directions:
- Heat oven to 325 degrees to toast tostadas (but toast them at the very end before serving).
- Heat refried beans on stovetop at medium-low for 5-10 mins.
- Chop avocado, cilantro, and radishes into bite size pieces and place in small serving bowls.
- Put pickled jalapenos, pickled onion, and salsa in small serving bowls.
- **If you’re using eggs – either scramble or make flat omelet and cut into pieces to sprinkle on top. Cook right before serving.
- **If you’re using pork – boil water on stovetop and warm for about 15 minutes to heat. Place in bowl before serving.
- Toast tostadas right before serving for 3-5 minutes until warmed through.
- Your guests can put whichever toppings they like on them. Enjoy!
