Below we’ve created a delicious Mother’s Day dinner using a few items from our Mother’s Day Customized Gift or Subscription Box that the entire family can make while mom relaxes…because the only cleaning mom should do on Mother’s Day should be her plate. Mother's Day Dinner

Appetizer: Italian Cranberry Meatballs

Ingredients:
- Piedmont Kitchen Co. Smoked Italian Meatballs
- 1 bottle Heinz Chili Sauce
- 1 can Jellied Cranberry
- Cilantro

Directions:
- Combine chili and cranberry sauce together. Heat in the microwave. Add brown sugar for a sweeter flavor.
- Cut meatballs into smaller bite sized pieces and add meatballs to the slow cooker.
- Pour the sauce over the meatballs.
- Cook on high or low, depending on how much time you have, until warm.
- Serve on small plates with toothpicks and a bit of cilantro to garnish.

 

Main Dish: Chicken Alfredo

Ingredients:
- 1 lb bag of Piedmont Kitchen Co. Buttermilk Brined Pulled Chicken (you only need to use 1/2 lb of chicken for recipe, so save the rest for another meal)
- 8 oz Fettuccini
- 2 TBSP Extra-virgin olive oil
- Salt and pepper
- 1 ½ cup whole milk
- 1 ½ cup low sodium chicken broth (or use chicken bouillon in a jar)
- Minced garlic
- ½ cup heavy cream
- 1 cup freshly grated parmesan 
- Parsley to garnish

Directions:
- Thaw chicken in fridge overnight, or use from frozen, by boiling water and placing bag in the water for 15 minutes to warm up.
- Heat oil in a large skillet over medium heat.
- Add milk, broth, and garlic to skillet. Season with salt and pepper and bring to a simmer. Add fettuccine, stirring frequently for about 3 minutes. Let cook until al dente, 8 minutes more.
- Stir in heavy cream and Parmesan until combined. Simmer until sauce thickens.
- Remove from heat and stir in warmed chicken. Garnish with parsley.

 

Side Salad: Caesar Salad with Made-from-Scratch Dressing

Ingredients:
- 2 small garlic cloves, minced
- 1 teaspoon anchovy paste (found near the canned tuna in the supermarket)
- 2 tablespoons freshly squeezed lemon juice, from one lemon
- 1 teaspoon Dijon mustard (we like the brand Maille)
- 1 teaspoon Worcestershire sauce
- 1 cup mayonnaise, best quality such as Hellmann's Real
- ½ cup freshly grated Parmigiano-Reggiano
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper

Directions:
- In a medium bowl or mason jar, whisk or shake garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce together.
- Add the mayonnaise, Parmigiano-Reggiano, salt and pepper and whisk or shake until well combined.
- Taste and adjust to your liking. The dressing will keep well in the fridge for about a week.
- Top chopped romaine lettuce, croutons and parmesan cheese with Caesar dressing.


Bread Sticks: Parmesan Garlic French Bread

Ingredients:
- 1 Loaf of French Bread, or any other bread you like
- Butter
- Garlic Powder
- Oregano
- Parmesan Cheese

Directions:
- Preheat oven to 400 degrees.
- Cut French bread in three equal sections, then cut each halfway through the middle long ways.
- Mix softened butter, garlic powder, and oregano together and spread on the inside of the bread. Sprinkle with parmesan cheese as well.
- Wrap in tin foil and toast for 10 minutes. Open tin foil and toast for another 3 minutes to make the top of the bread crunchy.
- Serve on the side with the salad and the chicken alfredo.
